
This light and airy cheesecake is perfect for a satisfying breakfast or as a delicious treat. With its gentle balance of protein, healthy fats, and natural sweetness, it’s designed to nourish your body while still being incredibly delicious. And without the “bottom”, it’s ready for baking in just a few minutes!
Serving Ideas:
Serve with seasonal fruit; a handful or two of your favorite berries, or, as pictured, stewed apples – for additional fiber.
It would also be beneficial to add some nuts or nut butter for their healthy fats.

Gentle Nutrition:
Quark: Rich in protein, quark helps keep you full and supports muscle health. It also contains calcium, which is essential for bone and muscle health, also supporting your blood vessels and nerves.
Eggs: Best source of protein, also providing essential nutrients like choline which benefits memory, mood and muscle control, and Vitamin D nurtures bone and teeth health, reduces risk of certain diseases, supports immune system and helps you body absorb calcium.
Xylitol: I chose this natural sweetener because it helps avoid sugar spikes and is gentle on teeth, making it perfect for breakfast. Of course, you can use regular white sugar, or any other sugar you prefer.

Equipment For This Recipe:
Xylitol, Springform Pan, Hand Spatula, Mixing Bowl, Handmixer
Ingredients
- 5 Eggs
- Pinch of Salt
- 1kg Quark (Curd Cheese or Cream Cheese)
- 200g Xylitol (or any Sugar you prefer)
- TSP Vanilla Extract
- TBSP Lemon Juice
- Pack of Vanilla Pudding (40g)
- 60g Flour
Directions
- Preheat the oven to 150°C (fan setting).
- Separate the egg whites from the yolks. Add a pinch of salt to the egg whites and beat them until stiff peaks form. Set aside in the refrigerator.
- In a large mixing bowl, beat the egg yolks with the xylitol using a hand mixer until light and frothy. Add the quark, vanilla extract, lemon juice, vanilla pudding powder, and flour, mixing until fully combined.
- Using a spatula, gently fold the whipped egg whites into the batter, taking care to keep the mixture airy.
- Pour the cheesecake mixture into a greased springform pan. Bake for approximately 50 minutes or until set.
- Allow the cheesecake to cool completely before serving. For best results, serve chilled.
